Java Estate
All the big estates on Java are owned and operated by the Indonesian government. The four main ones that we buy are Kayumas, Pancoer, Jampit, and Blawan, all located right next to each other in the far east of the island (see map in photos). Of these, Jampit and Pancoer have the highest elevation (and, not coincidentally, are the two we buy from most frequently). The main varietal on Java is Typica, although USDA cultivars have been introduced and are promoted by the government for disease resistance. The processing on Java is different from most of the other Indonesian islands in that it is fully washed (see More Info for Sumatra or Bali for the differences). This gives the coffee a cleaner, balanced profile, although it still has the trademark Indo body. Grading is one of those idiosyncratic things that will be slightly different everywhere you go in the coffee world. On Java, grade and bean size are designated by letters and numbers. The coffee we buy is the highest possible, “A-WP/1X.” That is, A grade, washed process, 1X size (equivalent to 17-19 screen).
